Cooking Classes in Italy - from one day to one week!

Have you seen enough Italian museums?

Well, why not try a museum of a different type - you still have a chance to appreciate the arts of the locals, just in a different setting, and with a great reward at the end - the meal you've cooked and the wine to enjoy it all the more.

You will usually see two different versions of cooking classes: "Chef Demonstration" and "Hands On" lessons.

In the Hands-on lessons, each participant actually gets involved with the cooking, and the class takes more time and uses more materials.

The Chef Demonstration is usually a class in which you are seated and watch as the Chef does the cooking.

Although both are great, be sure to ask which one your class is before signing up for any cooking class, whether it be in North America or in Europe. This way you can help to avoid any disappointment with your cooking experience.

We believe that cooking in Italy is a wonderful way to really experience the hospitality and the charm of the Italian lifestyle - not to mention the fabulous food and recipes you will go home with.

BELLA VISTA TOURS COOKING CLASSES:

All of our classes are particular to the area in which they are taken.

In other words, in Genova and the surrounding area of the Cinque Terre, you will learn how to make the best Pesto sauce in the world..that's what Genova is known for.

In Tuscany, you will make fabulous Tuscan bean soups.., in Northern Italy you'll learn the secret to the delicious sauces for Polenta..and so on and so on.

We offer daily classes, which always include the meal with wine after the lesson.

The prices are per couple, and if there are more than three people, there is an additional discount. All prices are based on the Euro rate of exchange as of December 1, 2004 and are subject to change.

We organize traditional Tuscan food preparation classes for anyone with or without experience, who wants to discover simplicity and pleasure of healthy and natural Tuscan plates.Classes and courses will cover many aspect of traditional cookery and including some historical notes, hall made in a familiar and welcoming Kitchen of Mamma Donatella, expert cook of traditional food. Classes will be hands on and you personally will participate in cooking the many delicious dishes included in a meal menu and will followed from a dinner or lunch were you will taste all of them.
You don't need specific experience and the classes are made in a simple way also for beginners, but complete enough for expert cook either.

The class was held in the restaurant kitchen. There was one other couple who were there for a week of classes.

We made pasta by hand--everything from mixing to rolling out. We made gnocchi again by hand except the potatoes were put into a ricer. We learned about truffles---the difference between black and white and even tasted them.

From the pasta dough we made ravioli --filled with cheese and truffles (unfortunately we didn't have these for dinner)  then made tagliatelli pasta and had that with a porcini cream sauce. Over the gnocchi we had an arrabiata sauce. Both sauces were made in the class.

During our cooking we tasted some custard, a chestnut pie, some wine and some cheese. It was a very light and fun atmosphere.

After cooking we went back to our room to change (about 45-60 minute free time) then went back to the restaurant for dinner with the other couple. Had the tagliatelli pasta with a white wine, then the gnocchi with a red wine, then a secondi which they made special for us since we had vegetarian--a potato flan and eggs with tomatoes, the other couple had rabbit. Then dessert with AcquaDi Vita (best of Grappa).

We spent the rest of our trip looking for the best AcquaDi Vita because my husband fell in love with it. On our last day in a wine/coffee bar in Firenze we found it and after having them look for a full bottle in 2 of there bars we were able to buy a bottle. Acqua Di Vita of Moscato Uva. It was more than we thought we were going to pay, but with so much trouble we had to buy it. We also found the winery of the wine we had during cooking and the dinner and bought some of the those.  It was a great class.

Especially dedicated to those who love Italian cuisine, wine and culture, this is a touring "hands on" cooking course by expert home-cooks, teaching traditional Tuscan and Mediterranean cuisine. Every day you will have a cooking class by a different cook, in a different kitchen, so to give you a wide experience of cooking styles. And every day you will have an excursion to visit a special place of our region

Some informations about the Ligurian cooking courses

Where does it take place? It takes place in a pictoresque village of the Ligurian country a few minutes by car far away from the towns of Albenga and Alassio.

Who are the chefs?

The chefs that teach cooking are professionals that have been working for years in the best known local restaurants.Their recipes are the same that their grandmothers cooked, using the natural and simple tastes and smells of the Ligurian tradition.

What is the aim of the course? Let people know the tradition and the secrets of Ligurian cooking, giving a good result to local cultivations and the vegetables of the kitchen-gardens, with its fragrances and peculiarities. A dietician will teache the nourishing properties of Ligurian food.

Gourmet Dinner The first night the students can approach to the themes that they will be teached the next day.

The Gourmet Dinner aims at refining the knowledge and the taste of the student.

The Cook Dinner …after a whole day in the kitchen, it’s the right moment for a gastronomic break…

The courses

Some of the courses you can learn to cook are: puff-paste with beets and olives, artichokes flan with sheep’s milk Ligurian cheese fondue, "ravioli" made with Ligurian herbs, acacia-honey "semifreddo" and other tasty morsels.

During the lesson, mediterranean cooking is taught- the basics for learning the secrets of the chef - the lesson can focus on appetizers, first or second courses.The course will be given partly in a class situation, and partly in the kitchen - they will go over utensils, ovens, and temperatures.

NOT SURE WHERE TO SPEND TIME DOING A COOKING COURSE?

There are some areas of Italy that are more famous and well known than others - and those may be the places that first come to mind when deciding where to do a Cooking School.

For example, Tuscany is beautiful and has become more popular because of movies and books that feature its rolling hills and vineyards. However, there are lesser known areas of Tuscany and the rest of Italy that are still free of tourists and full of locals jumping with joy to teach you how to cook - often at prices that are must lower than the "famous" areas.

For instance we can help you to decide if you want to learn to cook, and speak Italian at the same time, by spending a day with a local "Signora" who barely speaks English but is so full of charm that you'll be using your hands to cook and communicate!

If you are more of a professional, we will put you with a professional Italian Chef (who speaks perfect English) and he will show you how he prepares the meals for his four star hotel kitchen in the Cinque Terre, using the local seafood as the base of his menu.

So tell us how serious you are about cooking, or drinking wine, or just hanging out and getting to know the Italians, and we will send you in the right direction!
